Bank Holiday Weekend Baking

Woo, a long weekend. An extra day for baking. Wonderful. And today I decided to have a go at a rather yummy-sounding recipe which appears in this month’s BBC Good Food Magazine, Apple and Walnut Cake. The cake requires three grated eating apples and right now our apple trees are delivering the goods. Well, one of them is. We have an eating apple tree and a cooking apple tree and they take it in turns to produce fruit. Currently the cooking apple tree is having a little rest. No problem, as here are lots of lovely rosy/russetty apples just asking to be eaten and baked with.

I made the recipe exactly as given and it turned out beautifully. The only thing I changed was the icing. I used a butter cream rather than the cream cheese frosting suggested in the recipe (only because I had no cream cheese!) My icing was made with 400g icing sugar, 200g butter, two tablespoons dark brown sugar and a drizzle of golden syrup. I sandwiched the cakes together with half the icing and whole walnuts for added crunch and yumminess, swirled the rest of the icing on top and finished it all off with the rest of the walnuts. Actually, that’s not strictly true. I finished it off with some of the walnuts and ate the rest.

The family consensus  was “Mmmmmmm!” And that’s what it’s all about really.
