The Fabulous Ferreronella Cup Cakes :-)

Ferrerronalla cupcake

All the credit for this unbelievably calorific extravaganza must go to my elder son, who came up with the concept, and who, together with my younger son selflessly taste-tested and suggested improvements šŸ˜‰

I started with a basic, simple, chocolate cupcake recipe – this one is fool proof, quick and easy. The fun starts when you get to the embellishment. I urge you to give it a try, but if you’re worried about calories, forget it. Each cupcake contains about a squillion times your daily allowance.

INGREDIENTS

200 g self raising flour
200 g light brown sugar
150 ml sunflower oil
180 ml Greek yogurt (or other plain yogurt)
6 heaped tablespoons cocoa
100 ml water
2 eggs
teaspoon vanilla
100 g dark chocolate chips

METHODĀ 

  1. Line 24 medium muffin tins or 12 large muffin tins with papaer cases. I prefer to make these in smaller cases because they are so super rich.
  2. Heat the oven to 180 C.
  3. Place everything except the choc chips in a large bowl and whisk until smooth and creamily blended.
  4. Fold in the choc chips.
  5. Divide the mixture among the muffin cases and bake for twenty minutes or until a skewer inserted in the centre of one comes out clean.
  6. Leave to cool on a wire rack before decorating.

ICING

300 g icing sugar
150 g butter, softened
3 large tablespoons Nutella Ā plus extra
Ferrero Rocher chocolates, cut in half

TO DECORATEĀ 

  1. Whizz the icing sugar and butter together in a food processor until firm and creamy, then add the 3 tablespoons of Nutella and continue to whizz untilĀ incorporatedĀ and a lovely light brown colour.
  2. Now, using a melon baller, scoop out a little from the top of each cup cake – this is where my younger son came in handy. He did this brilliantly .
  3. Fill the holes with a teaspoonful of Nutella.
  4. Pop a half a Ferrero Rocher over the Nutella and then pipe some icing around the choccie.
  5. YUM! Eat, enjoy and share if you’re really generous.
