Passion Fruit Cake

Or, more correctly, Grenadilla Cake. In South Africa, Grenadillas (passion fruit) grow abundantly. They are eaten in fruit salads and frequently used in baking. We used to have a wonderful grenadilla vine, creeping along the fence, from which I’d pick 20 – 30 fruits at a time and use them to make this marvellous cake. Nowadays I wait for the shops to reduce them in price, which they invariably do because they think they’re past it when the skins go wrinkly. In fact, much like people, they’re in their prime when the skins go dry and begin to wrinkle. Scrape out the pulp and seeds from at least four fruits (six would be better for a deeper flavour)
